Cherry Limeade Cupcakes :]

I felt like messing around in the kitchen after Brittany posted about her yummy Carrot Cake today [: I've seen the Cherry Limeade Cupcake floating around on pinterest but have never looked at the actual link, I actually still haven't :o
I just messed around to make my own version haha, BUT they did end up being yummy (:
&& are simple because they are only semi home made haha ;)

Cherry Limeade Cupcakes:


Ingredients:
1 box Duncan Hines Classic Yellow Cake Mix
4 Eggs
1 Cup Milk
1/3 cup Melted Butter
1/4 Cup Lime/Lemon Juice Mix

Frosting:
8oz Cream Cheese
1/2 Stick Butter Softened
1/2 Cup Whipped Cream
Powdered Sugar
Cherry Extract or Maraschino Cherry Juice  (to taste)

Pre-heat to 350
  1. Mix all ingredients except lime/lemon mix in medium mixing bowl, and blend (may not be completely smooth)
  2. Add lime/lemon mix after your batter has been blended. You can add more or less to taste.(you could also add a couple drops of green food coloring)
  3. Fill your baking cups and pop them in for 18 minutes, then cool out of the pan.
Frosting: 
Note: I use cream cheese from the 8oz tub because it's softer than the bricks, if you use a brick I would let it soften out of the fridge for a little while. 
  1. Put Cream Cheese and Butter in a small mixing bowl, cream until smooth.
  2. Add Powdered sugar until you get the desired sweet taste 
  3. Mix in whipped topping and cherry extract/juice to taste as well
  4. I also added a couple drops of pink food coloring but it's optional :) 
  5. Put in the fridge until you're ready to ice, once your cupcakes are iced store them in the refrigerator or serve immediately.
